The BEST Brownies You'll Ever Have!

Funny story, I hate chocolate. Well, "most" chocolate. My entire life I have always been more of a vanilla girl but over the past few years, I have developed a taste for dark chocolate and even rich moist chocolate cakes and brownies on occasion.

I was on the hunt for brownies that not only taste good but I can also feel good about eating. That turned out ot be an impossible task so I decided to experiment in the kitchen and created a new brownie recipe and guess what?!?!? They are THE BEST brownies I have had in a LOOOONG time AND they are nutritious!!! Absolutely LOADED with nutrients, superfoods & functional mushrooms! They are also vegan, gluten free & contain NO refined sugar! 🙌🏽

INGREDIENTS:

1 & 1/2 cups baked Okinawa Sweet Potatoes

1/4 cup Cassava Flour

1/2 cup Date Syrup or Maple Syrup

1 tbsp Coconut Oil (mine was room temp, so it was in solid form)

1/2 cup Cashew Milk Concentrate - use code HOLISTICHILDA for a discount (you can substitute w/ cashew butter)

1/2 Tbsp Vanilla

1 Flax Egg (you can substitute with 1 real egg)

1/3 cup Semi-sweet Dark Chocolate Chips

1/4 cup "Real Mushrooms Hot Chocolate" (You can substitute w/ cacao powder but I am sure it will change the flavor)

A big pinch of Salt

1/4 tsp Baking Powder

1/4 tsp Baking Soda


INSTRUCTIONS:

  1. Preheat oven to 350 degrees Farenheit

  2. Put all ingredients except chocolate chips into a large bowl and mix until smooth

  3. Add chocolate chips and gently fold in

  4. Pour into a baking dish lined with parchment paper. The batter will be thick

  5. Bake at 350 F on top shelf for 35 minutes or until knife comes out clean

  6. Let cool for 15 minutes and ENJOY!

I left these out on the counter with parchment paper over the top for one night and they still tasted wonderful the next day. I put them in an airtight container in the fridge after that and was SHOCKED to see that they almost tasted better cold the next day! Still moist and flavorful!
